Description of the preparation:
Favorite vegetables – eggplant, zucchini and peppers – combine together to create a unique piquant taste. Preparation is very easy and does not require additional sterilization. Want to treat your loved ones with vegetables from the garden in the winter, then take a look at this recipe.
Prepare all the ingredients.
Rinse the eggplants, dry and cut into circles, about 7-10 ml thick.
Put the circles on a greased baking sheet, generously grease the top with vegetable oil and bake at 200 degrees for 15 minutes (until soft).
Zucchini cut into about the same circles. If the zucchini is large, then cut each circle into another 2-4 parts.
Bake vegetables at the same temperature. until they become soft. Both zucchini and eggplant need to be turned in the process 1 time.
In a frying pan, fry chopped onion and feathers chopped into strips.
Add chopped tomatoes, knife-chopped garlic and tomato paste.
Continue cooking for another 5 minutes.
Add salt, sugar and pour in the remaining oil.
Add the vegetables previously baked in the oven.
Mix everything gently and simmer over low heat for 40 minutes. Add citric acid 5 minutes before cooking.
Ratatouille is ready for the winter.
