Prepare all the necessary ingredients. Choose a shank with a lot of meat weighing from 1.5 kg. It is better to take about 2 kg.
Rinse the knob well, if there are any bristle residues, scorch them. Boil the shank over low heat for 2 hours with the addition of salt and bay leaves.
While the shank is being cooked, prepare the sauce. Combine ketchup, mustard and soy sauce.
Stir the sauce, it turned out quite thick, it will just be convenient to lubricate the shank with it.
String boiled shank on skewers. I advise you to use 2 skewers at once so that the knuckle does not turn during the frying process, as it is quite heavy. Lubricate the shank on all sides with the prepared sauce.
Cook the shank on the grill, occasionally coating it with additional sauce. Fry until the shank has a beautiful golden color on all sides. In fact, inside it is ready, it remains only to brown outside.
