Wash eggplant, make a couple of punctures with a fork. Bake them in the oven at 200 degrees for 1 hour.
Then cool the eggplant. Remove the peel and chop finely into cubes with a knife.
Dice the onions. Fry it for a couple of minutes until transparent.
Add tomato paste and a small amount of water. Salt and pepper. Extinguish until excess liquid evaporates.
Combine eggplant with onions, season with oil and vinegar. Add Italian herbs.
Chop garlic and chives. Add to eggplant, mix well.
