Description of the preparation:
This recipe for carrot dessert came to us from Turkish cuisine, it is called "Jesery". It is not prepared quickly, but very simply, all the steps are described below. Which nuts or spices to add and what shape to give the dessert is up to you. It can be cooled in the form of a large layer, and then cut into squares or rhombuses, the shape can be very different.
Prepare the ingredients for dessert.
Grate the carrots on a fine grater, measure three glasses, put in a pan with a thick bottom and simmer for 2 hours, adding water as it evaporates, stirring occasionally.
Grind walnuts, but not in very small crumbs, you can directly in the package using a rolling pin.
Remove the zest from the lemon and squeeze the lemon juice.
After 2 hours, add sugar, cardamom, vanilla extract and continue cooking until the carrots become caramelized and look like a sticky paste.
Allow the mixture to cool slightly.
Spread cling film on the table, pour evenly coconut, on top of which lay the carrot mass.
Put chopped nuts in the center.
Roll up the roll, helping yourself with the edge of the cling film and giving it density. Cool completely.
Free the dessert from the film and cut into slices.
Dip in coconut flakes.
Put the dessert on the dish.
