1. Lightly salted cucumbers

At 1 l. brine put 60 gr. salt, water I boil and let cool, to a warm state, my cucumbers, cut off my noses, straddle the horseradish leaves, sprigs of cherry and currant, garlic and peppercorns in a container. Pour brine and leave for 3-4 days salted.

2. Marinated Tomatoes Sweet-Spicy


● 2 kg fresh tomatoes (ripe and elastic)
● 1 red hot pepper
● 2-3 cloves of garlic
● 1 bell pepper
● Pepper Sweet Peas
● carnation
● sugar
● salt
● Vinegar 9%


Put the spices in clean jars, 3-5 peasr allspice, 3-5 cloves, 1 clove of garlic sliced, 1/4 of the bell peppers, cut into pieces and a small piece of hot pepper.
Wash tomatoes and dry. Put the tomatoes in jars.
Pour boiling water and let stand for 20-30 minutes. Drain the water and add 4 tablespoons of sugar and 2 tablespoons of salt per 1 liter of marinade
For boil and pour into jars. Add 2 tablespoons of vinegar per liter jar. Roll up the banks and flip.
Allow to cool at room temperature.

3. “Quick” pickled cucumbers


● cucumbers
● dill
● garlic
● Bulgarian pepper
● chili pepper
● salt

They will be salted in half an hour, very tasty in 4 hours.


My cucumbers, cut rings.

4. Blitz-recipe for "salted" cucumbers


● 1 kg of fresh cucumbers
● 4 tooth. garlic
● 2 tsp. vinegar
● 2 tbsp. salt
● dill – a small bunch.

All the ingredients are indicated on the eye, do not put everything at once, but try first to your taste.


1. So, first, thoroughly wash the cucumbers and dissolve them into quarters.
2. Put in a deep container (plate).
3. Then pour salt, add vinegar, chopped dill and garlic passed through a press. With this mixture we rub cucumbers in the refrigerator for 2-3 hours.
4. ALL! Fragrant, crunchy cucumbers are ready! Served with kebabs, young potatoes, and any other dishes.

5. Quick pickled tomatoes


● 1 kg of cherry tomatoes *
● 2-3 sprigs of dill
● 2-3 bay leaves
● 1 sprig of basil
● 50-70 ml apple cider vinegar (only apple cider)
● 5-6 allspice of allspice
● 5-6 black peppercorns
● a small piece of peperoncino (optional)
● 4-5 peeled garlic cloves
● 1 tbsp. l salt with a slide
● 1 tbsp. l Sahara
● 2 tbsp. honey


The hardest part is to put all the ingredients together!
Chop the tomatoes with a fork and put in a jar or pan. I use the pan.
Add bay leaf, peppercorns, allspice, peperoncino, chopped garlic, dill.
To boil water. I usually do by eye. But somewhere 2 liters leaves. It is necessary that the water covered the tomatoes. Therefore, you can simply put the tomatoes in advance (without anything) in a jar, pour water and see how much it is needed. Do not forget that there will be more sugar, salt, honey, acus.
In hot water, dissolve the salt, sugar. Pour over the tomatoes. Wait until all this potion has cooled.
Somewhere 1 hour. Then the brine is poured into the pan, boil again. Do not throw away any tomatoes! Dissolve honey in hot brine, add vinegar, basil and pour over tomatoes.
EVERYTHING! Now you need to cool and put the jar in the fridge. In about 1-2 days they will be ready.

Please add salt, sugar carefully! Try a pickle. It should be delicious, not nasty. I wrote about!

6. Slightly salted cucumbers (instant)


● 4 medium cucumbers
● 1 tsp. salt
● 3 cloves of garlic
● 10 g of dill


Wash cucumbers, scald with boiling water, dry, cut off tails. Each cucumber cut lengthwise into 4 pieces.
Chop the garlic into large pieces and chop the dill.
Pour cucumbers with salt, dill, garlic and mix well. All put in a plastic bag, remove the air and tightly tie. If there is a sealed vacuum container – you can safely use it.
Leave in the room for 4 hours. All is ready.

7. Squash marinated instant eating


● 500 gr. squash,
● 0.5 tsp salt.

For the marinade:

● 100 ml of olive oil,
● 3 tablespoons of 5% vinegar,
● 2 cha. spoons of honey
● 2-3 cloves of garlic,
● ground black pepper,
● fresh or dry greens.


Wash zucchini and cut off the peel. If zucchini young, you can do with the skin. Shred thin circles.
Put in a bowl, salt and leave for 30 minutes.
Cook the marinade. Skip garlic through a press, mix with olive oil, honey (if honey is thick, melt it in a water bath), vinegar, pepper and finely chopped greens. Perfect cilantro, basil, tarragon, dill, parsley. You can add a spoonful of paprika-paste or ketchup. Marinade mix.
Drain the formed liquid from the courgettes, wring it out by hand. Pour marinade, mix.
Put in the fridge until the morning. During this time, you can mix a couple of times.
