Baked Vegetable Salad


Eggplant – 2 pcs.
Bulgarian pepper – 2 pcs.
Tomatoes – 4-5 pcs.
Onion – 1 pc.
Garlic – 3-4 cloves
Cilantro – 1 bundle
Parsley – 1 bunch
Green onions – 1 bunch
Cumin (seeds) – 0.5 tsp.
Zira (seeds) – 0.5 tsp.
Olive oil – 3 tbsp. l
Lime juice – 1 pc.

For pitas:

Yeast (dry) – 1 tsp.
Flour – 400 g
Salt – 0.5 tsp.


1. Pierce eggplants in several places and bake with Bulgarian pepper at 200 ° C for 20-25 minutes. Cool and clean.
2. Cut the tomatoes into small cubes. Cut onions into small cubes. Finely chop the garlic. Wash and dry herbs, chop finely too. Peeled eggplants cut into small cubes. Also chop and peeled paprika.
3. Mix all ingredients.
4. In a dry frying pan, fry cumin seeds and zira for 1 minute. Add olive oil, salt and lime juice, mix.
5. Pour over the salad dressing. For serving this salad can be cooked pita.
6. Knead the dough (yeast, flour, salt, olive oil and 250 ml of water). Dough come divided into 10 equal parts, roll balls. Then roll each ball of dough into a cake, wrap the edges inside. And roll out a little again.
7. Fry in a dry frying pan for 3-4 minutes. on each side on medium heat under the lid. Pete's ready.
