Chinese New Year 2021

Salted "wet" salting hot.

I had almost 2 kg of fat, but this is not so important …

Cooking brine:

Pour into saucepan
600 ml of water
add
6 tbsp. tablespoons of salt
6 grains of allspice,
6 black peppercorns,
6 coriander peas,
1 bay leaf,
ground black pepper and
ground coriander 0.5 tsp (you can do without coriander).

Put the saucepan on the fire,
AND WHILE WATER IS BOILING, WE ARE FASTED.

Salo is cut into pieces 3-4 cm by 9-10 cm (it all depends on the can – I have 4 cans of 900 grams), put them in cans, add 2 chopped cloves of garlic and 1 bay leaf into each. When the brine boils, gently pour them jars of lard and add to each 1 teaspoon of sugar. Close and leave for 2 days. Drain the brine, shake out the fat from the cans, dry the pieces with kitchen towels. Spread each piece with broken bay leaf and chopped garlic, sprinkle with slightly freshly ground black pepper. We put them in plastic bags and put them in the freezer.
