Rassolnik with barley

– 1 liter of water
– 1/3 cup barley
– 4 things. pickled cucumbers
– 3-4 potato tuber
– 2 pcs. carrots
– 1 onion
– 1 tbsp. spoon of tomato paste
– salt, herbs to taste

1. Wash the barley and soak it overnight.
2. Add boiling barley to boiling salted water and cook for 15-20 minutes. Peel the potatoes, cut them into cubes and add to the barley, cook until ready. Cut the onion into slices and fry it in vegetable oil until golden brown.
3. Grate carrots, add to onion, salt and fry for 5 minutes, stirring occasionally. Add tomato paste to vegetable dressing, mix and add to saucepan with soup.
4. Grate the pickled cucumbers, add them to the soup and cook for another 10 minutes. When serving, sprinkle pickle on finely chopped dill.
