– 1 kg of fish fillet
– 4 tbsp. spoons of coarse sea salt
– 2 tbsp. spoons of sugar
– 1 lemon peel
– 20 grams of dill
– 1 or 1/2 tbsp. spoons of brandy
1. Grate a piece of fish fillet with salt and sugar.
2. Roll in lemon zest and dill. Sprinkle with brandy.
3. Close with cling film, slightly tearing it, so that there is air access.
4. Put in the refrigerator for several hours: at least 4 hours for a light-salty taste, and preferably at night.
