HOW TO MAKE CHIABATTU, ITALIAN WHITE BREAD

Ciabatta (Italian ciabatta) is an Italian white bread made from wheat flour and yeast.
Translated from Italian literally means "carpet slippers." The peculiarity of this bread is crisp and flesh with large, unevenly distributed porosity.
There are many varieties of ciabatta. Bread baked from whole wheat flour is called ciabatta integrale (ital.) ("Whole ciabatta"). In Rome, ciabatta is often baked with olive oil, salt and marjoram. If you add milk to the dough, you get ciabatta al latte (Italian) (“ciabatta on milk”)

I cook ciabatta or white flour or with the addition of rye flour or white flour with the addition of fried onions.

How to cook:

For a start, make a brew for a pair of buns. We will need a hundred grams of flour, a hundred grams of lukewarm water, a half tablespoon of sugar and 5 grams of dry yeast.
All of the above, without much effort, stir and in a warm place let the dough rise. It will take no more than half an hour.

After that, start kneading dough for ciabatta. For this we will need 450 grams of flour, a full glass of lukewarm water, 20-30-30 grams of olive oil, a brew prepared by us and an incomplete tablespoon of salt.
If you add fried onions to the dough, then you need to add it now …
The ciabatta dough should be soft and should be kneaded for about twenty minutes.

I bought a special plastic straw for standing the dough. If it is also lubricated with oil, then the dough easily falls out onto the desktop.

Cover it and remove for half an hour in a warm place.

Why is it important to have a pot from which the dough then easily falls out? Because after standing it is advisable to carefully, without crushing, divide it into two parts and put it in a baking sheet lined with parchment, carefully forming a pair of loaves. Sprinkle our ciabatta with flour.

Once again put the pan in a warm place. In our case, the heat from the warming up oven will be enough.

After the loaves increase about two times, we send them to an oven preheated to 210 degrees. The first 15 minutes bake ciabatta with a humidifier. You see a pot of water downstairs. Then we remove the water and turn down the oven to 200 degrees.
