When I first baked this cake, I realized that it was love at first sight — well, how can the combination of sweet shortcrust dough and acidic jam from preserves leave indifferent!
I give the proportions for a very tiny cake, so that you can safely increase all the ingredients in half. (On the 20×30 form, I quadrupled the ingredients)
140 gr flour
100 grams of softened butter
100 grams of sugar
200-300 grams of sour jam or jam – I have a cranberry
Beat butter with sugar, add an egg, and then flour. The dough should be soft, elastic.
Remove for 30 minutes in the fridge.
Preheat oven 200 degrees.
Divide the dough into 4 parts and roll into the cake layers – it is very convenient to roll it between sheets of baking paper (and bake on the same paper). The form of rolling is not important – you want in a circle, you want in a square. But the dough should be thin.
Bake cakes – they are ready in a few minutes. Cool it down.
Then trim the edges so that all the cakes are smooth, crumbs save.
Spread the cake with jam or jam, wrap in foil and remove for at least a few hours, crushing it with something heavy.
After impregnation, it will become softer. Before serving, coat the top and sides with jam, sprinkle with crumbs.
If you want a more crumbly cake, you can skip the oppressed procedure – in the photo I have exactly this option, I like it when the cake is firmer.
Very simple, yes? And he tolerates transportation very well, and it is not necessary to keep him in the refrigerator.
