It is very simple to prepare zucchini stumps, but it turns out tender, juicy and tasty! If you use minced turkey, rabbit or chicken, replace mayonnaise with natural yogurt, and take cheese with low fat content or even exclude it altogether, you will get a healthy dietary dish that is suitable for both adults and children. Take note of the recipe!
Prepare all ingredients.
Cut the zucchini into pieces, about 5 cm wide. If the peel is tough, then it is better to remove it.
Use a teaspoon to remove the pulp from each sliced courgette. The thinner the walls are, the better. Do not touch the bottom so that the juice does not escape during the process. You should get such "cups". Leave the pulp, it will be needed.
Heat oil in a skillet. Arrange grated carrots and diced onions.
Fry vegetables until soft, add half of the finely chopped zucchini pulp. Add salt and spices to taste.
Simmer everything together for a couple of minutes.
Then remove from heat and add minced meat. Stir everything until smooth. The filling is ready.
Rub the zucchini with salt. You can put on the bottom for 1 tablespoon. sour cream, then fill the "cups" with minced meat and place in a greased baking dish.
Put a tomato circle on top of the filling. Season with salt and pepper to taste.
Brush the tomatoes with mayonnaise and sprinkle with grated cheese. Bake the dish in the oven at 180 degrees for about 40-50 minutes.
Zucchini puffs are ready.
