Whole grain bread is very different from the bread that is sold in stores for its "real" taste. What it is, you will understand immediately, from the first piece. Not only is it tasty, it is also healthy, since the shell of the grain is preserved in it. To make whole grain bread, you can use a mixture of different types of whole grain flours, such as rye and wheat flour. If desired, you can add various seeds: pumpkin, sunflower, flax, sesame, coriander. Each time it will be a different bread with its own unique taste. Prepare your ingredients.
For the preparation of the dough, take 100 ml. water (of the total), add 3 tbsp. tablespoons of flour (from the total).
Mix to dissolve the yeast completely, cover with cling film, put in a warm place to ferment for 30 minutes.
The dough is ready for use in 30 minutes.
Pour the remaining water into a bowl for kneading the dough, add sugar, salt, pour in the dough, stir.
Pour in the remaining flour, knead the dough.
Knead the dough with your hands for about 5 minutes. Cover with a lid, place in a warm place for fermentation for 1.5-2 hours.
The fermented dough has increased in volume by about 1.5 times.
Sprinkle the work surface of the table lightly with flour, lay out the dough, do not knead any more, form the bread immediately.
Form the bread into the shape you like best. If you want to bake baked bread with a brick, place it in a baking dish.
For proofing, immediately transfer the bread to a baking sheet, seam side down. Leave for 45-60 minutes.
Preheat oven to 250 degrees. Use a sharp knife or razor blade to make several cuts before baking. Bake the bread for the first 10 minutes at 250 degrees, then lower the temperature to 180 degrees and bake for another 40-45 minutes.
Transfer the finished bread to a wire rack and cool completely to room temperature. You cannot cut hot bread, since the baking process is not yet finished, at this time a crumb is forming.
