The vinaigrette with Chinese cabbage turns out to be no worse than in the classic recipe. This vinaigrette is very original and delicious. When you don’t have sauerkraut at home, it’s Peking cabbage that will come to the rescue. It makes the salad crisp and fresh. For sourness, add lemon juice and the salad will be even better. Prepare all ingredients.
Cut the pickled cucumbers into cubes.
Chop the Chinese cabbage.
Boil the potatoes until soft, cool, peel, cut into cubes.
Peel the onions and chop them into small cubes.
Cut the boiled carrots and beets into cubes.
Combine all chopped ingredients in a bowl.
Pour in canned peas (drain the marinade from it in advance).
Salt and pepper the vinaigrette, pour in the oil and squeeze out the lemon juice. Stir.
