Below I will tell you more about how to make a vegetable stew with chanterelles. Mushrooms can be used both fresh and frozen. From vegetables, it is appropriate to add cauliflower, zucchini and eggplant. All vegetables I recommend to cook until they are half cooked so that they retain their shape and do not become too soft. The stew can be served as a side dish or as an independent dish.

Prepare all ingredients.

Wash and dry the chanterelles. Cut large mushrooms into cubes, small ones can simply be cut in half. Fry in a skillet over high heat until the moisture evaporates and golden brown. Set the chanterelles in a bowl.

Cut the onions into quarters, finely chop the garlic. Fry in a skillet until soft.

Wash carrots, peel and cut into cubes. Add to the skillet and cook for about 3-4 minutes.

Chop the cabbage into medium-sized slices. Add to skillet. Fry the cabbage until it loses its firmness slightly, then salt and pepper.

Wash the bell peppers, peel them, cut into slices. Add to the rest of the vegetables, stir, fry for 2-3 minutes. Then add some water and simmer, covered, until the cabbage is soft.

Add frozen green peas, simmer for another 1-2 minutes.

Finally add the fried chanterelles and stir gently.
