Description of preparation:
I want to share a family recipe for a delicious Ural fish pie. You can cook it from almost any fish and even from canned fish. How to bake such a pie is described in detail in a step-by-step recipe. Do not be afraid to use raw potatoes, since during cooking with the recommended mode, it is perfectly baked, becomes tender and crumbly. If the fish is not fat enough, you can add a couple of tablespoons of sour cream or cream, from this the cake will only benefit in taste.
Prepare the ingredients.
Dissolve salt, sugar, yeast in warm milk, add vegetable oil.
Pour 3 tablespoons of flour (of the total), stir, leave for 15 minutes to activate the yeast.
The dough is ready to work, you can knead the dough.
Pour the remaining flour, knead the dough.
Cover the mixed dough with cling film and place in a warm place for fermentation for 1.5 hours.
After 40-45 minutes from the start of fermentation, warm the dough.
While the dough "fits", prepare the filling. Heat a mixture of vegetable and butter in a pan.
Sauté finely chopped onion in oil until “transparent”, salt and pepper.
Cut the fish into pieces, slightly salt.
Divide the dough into three unequal parts: large, medium and small. Roll out most of it into a layer, put it on a baking sheet covered with baking paper.
Cut potatoes into thin circles, salt.
Put the chopped potatoes on the dough, put the fried onions on top.
Put pieces of fish on the potatoes, cover with a layer of dough, pinch the edges.
Cut the remaining dough into thin strips; I made six strips.
Twist the strips together in the form of "flagella", put the flagella from the dough around the perimeter of the pie.
Mix the egg yolk with a tablespoon of milk.
Grease the cake with a mixture of yolk and milk before baking. Make two holes in the dough on top so that the steam generated during baking comes out through them.
Bake the cake in the oven for 40-45 minutes at a temperature of 180 degrees.
