Tyrolean Berry Pie is a delicious treat that should be made at least once during the berry season. There is nothing difficult in its preparation, especially if you follow the step-by-step recommendations. There will be no indifferent, such a cake will decorate any festive table.
Prepare your ingredients.
Separate the whites and yolks of 5 eggs. Add a pinch of salt to the proteins.
Whisk the egg whites and salt until soft peaks.
Add 150 grams of granulated sugar to the whipped egg whites gradually while whisking.
Whisk the whites until firm peaks.
Add 5 yolks one at a time while whisking.
Stir in 140 grams of flour, a bag of vanilla sugar and 30 grams of cornstarch with a silicone spatula.
Pour the dough into a 10-inch baking dish. Bake the biscuit for 25-30 minutes at 180 degrees.
Mix 4 egg yolks and 100 grams of sugar, add 40 grams of cornstarch, whisk for 1 minute.
Heat the milk to a boil and pour some of it into the egg yolk mixture, mix, and pour the egg mixture into the milk again.
Heat until thick, then stir in the butter and a packet of vanilla sugar.
Transfer the cream to a bowl, cover with plastic "end-to-end", refrigerate.
Cut off the top crust from the finished biscuit.
To assemble the pie, place the sponge cake in a baking ring and line the sides with acetate tape.
Sugar soak with water, sugar, and one tablespoon of brandy or rum.
Saturate the biscuit with the sugar impregnation using a silicone brush.
Place the cooled cream on top of the biscuit.
Place the berries on top of the cream. Prepare berry jelly, refrigerate.
Pour berry jelly on top of the cake, put in the refrigerator until it solidifies. Remove the acetate tape before serving, transfer the pie to a plate. It's incredibly delicious!
