In general, many different options for dishes have already been invented from zucchini, but it is the pancakes that turn out to be the most delicious. Add potatoes, cheese and herbs to this version of the dish. You can serve pancakes with any sauce or sweet grain mustard and fresh vegetables.
Prepare all ingredients.
Wash the zucchini, pat dry and trim the ends on both sides. Then grate the zucchini on a fine grater and transfer the shavings to a bowl.
Next, peel and rinse the potatoes, grate on a fine grater, also add to the zucchini. Now squeeze the excess liquid out of the potatoes and zucchini very well. Press with your hands.
Grate the cheese on a medium grater, then add the cheese to a bowl with zucchini and potatoes.
Beat the chicken egg into the mass. Rinse and dry the parsley, dill and just a couple of mint leaves. Chop the herbs finely and add to the container.
Add wheat flour, salt and ground pepper to taste.
Mix all the ingredients well, the mass should not be liquid.
Heat the frying pan and add vegetable oil. Place the pancakes in a skillet and cook for 2.5-3 minutes on each side.
