This preparation is also useful in the preparation of borscht, cabbage soup, soups and main courses where you need a tomato.

Wash the tomatoes well. Make cross-to-cross cuts on top.

Boil water in a saucepan, lower the tomatoes for 1-2 minutes. And immediately put in cold water, preferably in ice. Peel the tomatoes.

Pour boiling water over the tomatoes. Cover and let stand 15-20 minutes. Drain the water into a saucepan, boil and pour over the tomatoes again for 15-20 minutes. Drain the water; you will no longer need it.

Boil the tomato juice in a saucepan. While the juice is boiling, add salt, sugar and vinegar to the jar.

Pour the boiled tomato juice over the tomatoes. Roll up the lid, turn it upside down and wrap it in a blanket until it cools completely.
