It is not necessary to separate the yolks from the proteins in the chicken eggs to beat them separately, creating a high biscuit. Just beat eggs together with sugar and salt in a lush foam and then proceed according to the classic scenario of making biscuit dough. You can add a couple drops of flavor or vanilla sugar.
Prepare the ingredients.
Drive chicken eggs into a deep bowl with high sides or into a bowl of a food processor. Pour in the same salt and granulated sugar. Salt must be added, otherwise the sweetness of baking will not be felt. Whip everything for 3-5 minutes in a lush foam at the highest speed of technology. At this stage, preheat the oven to 180 degrees.
Pour the wheat flour after sifting it. Baking powder or soda does not need to be added, the biscuit will turn out magnificent. Stir the flour with a silicone spatula or whisk, taking care that the biscuit mass does not settle.
Lubricate the mold with vegetable or butter, pour the biscuit dough into it – it will be thick, but not dense.
Send the mold with the dough into the oven for 20-25 minutes, watching the baking surface. To make a cake, use a high shape, for a cake for tea – a wide one. As soon as the biscuit is browned, remove the mold from the oven and turn the top upside down, otherwise the pastries will settle. Leave the dessert as it is to cool.
Remove the cooled biscuit from the mold and serve it to the table or prepare the cake, cutting it horizontally into 2-3 parts.
