Prepare all ingredients.
Peel the sweet potato, grate on a coarse grater. Salt and let sit for 15 minutes.
Squeeze the sweet potatoes through a fine sieve or cheesecloth.
Do not drain the liquid that remains. Leave it on for 10 minutes to allow the starch to settle.
Drain and add the remaining starch to the grated sweet potato. Then add vegetable oil, starch and black pepper. Stir again.
Chop the green onion finely, add to a bowl and stir.
Using the cooking ring, form the hash browns no more than 1 cm high. Fry them in a skillet on both sides for about 4-5 minutes over medium heat.
