I want to offer a long-loved recipe for how to cook a filling for dumplings with raw potatoes and bacon. Dumplings turn out juicy, nourishing and very tasty! You can both boil them and steam. Prepare all the ingredients.
Peel and cut the potatoes into small cubes; the finer it is, the better. First, put the potatoes in water, then drop them onto a sieve and transfer to a deep bowl.
Add the onions, chopped with about the same cubes, to the potatoes. Onion gives the filling a juiciness, so I do not recommend reducing the quantity or even eliminating it.
Then add fresh lard, salt to taste and ground pepper, twisted in advance in a meat grinder. You can add your favorite spices.
Mix everything thoroughly. The filling is ready. Dough for dumplings with such a filling is suitable for both the most common dumplings, and mixed on mineral water, kefir or yeast.
