Rabbit and vermicelli soup is a universal dish, because it can be included in the diet of both an adult and a child. The soup turns out to be bright, aromatic and mouth-watering, and such a soup is prepared quickly and easily! Vermicelli can be chosen to your taste, as long as it is made from durum wheat. Prepare all ingredients.
Rinse the rabbit, put in a saucepan and cover with water. Add chopped onions and carrots, bay leaves, peppercorns and salt to taste. Boil the broth on a low boil until the meat is completely cooked.
While the broth is cooking, fry the onions and carrots in a skillet.
Cut the potatoes into cubes.
Strain the finished broth, separate the meat from the bones and return to the saucepan. Add vegetables and cook until potatoes are cooked through. At the very end, add the vermicelli, herbs and chopped garlic.
Adjust soup to salt, bring to a boil and remove from heat. Let it brew for 10-15 minutes and can be served. The soup with rabbit and noodles is ready.
