Prepare your ingredients.
Wash and dry the zucchini, cut off the ends on both sides, then cut the zucchini into small slices.
Peel and rinse carrots and onions. Cut the onion into strips, grate the carrots on a medium grater.
Transfer the zucchini, carrots, and onions to a saucepan.
Pour the tomato juice into a saucepan.
Then add vegetable oil to the vegetables.
Pour in salt and sugar, add bay leaves. Place the lid on the pot and simmer the courgettes for 35 minutes.
At the end of cooking, add vinegar, stir and turn off heat.
Arrange the salad in sterile jars and immediately roll up tightly.
