Description of the preparation:

When adding salt, try the cabbage to taste. If quince is sweet, maybe a little more salt is needed.

Cut the cabbage into thin strips. Transfer to a deep bowl.

On a coarse grater, grate the carrots, add to the cabbage.

Cut the quince and remove the seed box.

Rub the quince on a coarse grater. Add to the bowl with cabbage.

Salt, add sugar and rub well with your hands. Cabbage should highlight juice and become wet.

Transfer the cabbage into a clean and dry jar. Tamp, cover with wax paper or gauze. Leave at room temperature for 3 days. During the specified time, puncture the cabbage every day 2-3 times. After three days, close the cabbage with a capron lid and put in the refrigerator.
