For the preparation of a biscuit roll, it is advisable to use fresh eggs, otherwise they will not beat well, and the cream will not work. If you wish, then the roll can be made with another cream. It can be condensed milk or whipped cream.
Prepare your ingredients.
In a bowl, combine eggs with sugar (save 1 egg white for the cream).
Beat the egg mass with a mixer for 3-5 minutes.
Add premium flour.
Mix everything well.
Pour the dough onto a silicone mat and place it on a baking sheet. You can grease it with oil if you are not sure of its quality.
Send the biscuit to an oven preheated to 190 degrees for 15 minutes.
While it is hot, roll it into a roll and leave to cool completely.
In a bowl, beat the egg white with 2 tbsp. tablespoons of sugar.
Unfold the roll and brush it with the prepared cream. Top with pieces of jam berries.
Roll the biscuit back into a roll. Decorate it with the remaining cream using a piping bag.
