Prepare your ingredients.
Beat eggs into a container for kneading dough, add sugar, beat in a fluffy mass.
Add ricotta, beat again.
Add flour and baking powder, beat.
Add the zest of one lemon.
Add 1/3 lemon juice to the dough, as much as possible (optional).
Divide the dough into tins.
Bake the muffins in the oven at 180 degrees for 30-35 minutes.
Cool the dough to room temperature.
At this stage, you can already stop, just sprinkle the muffins with powdered sugar, or you can quickly make lemon icing. This will require 50 grams of powdered sugar and a couple of tablespoons of lemon juice.
Pour lemon juice into the icing sugar, not the other way around, because this can adjust the required degree of density. Stir until smooth.
Using a cooking brush, apply lemon frosting to the muffins, sprinkle with colored dusting sugar if desired. The cupcakes are ready because the frosting hardens very quickly.
Pour coffee or tea and enjoy delicious ricotta muffins.
