There are many varieties of dietary rice soup. Today we will make a soup with rice and tomatoes. Such a light and healthy first course is suitable for a dietary table or simply for a variety of everyday menus. It is better to take long-grain rice, which has low stickiness and does not boil so much.
Prepare all ingredients.
Cut the potatoes into cubes and transfer to a saucepan.
Add shredded carrots, finely diced onions and rinsed rice.
Pour in broth or water. Season with salt, add bay leaf and cook until all ingredients are cooked through.
Add chopped herbs, chopped garlic and tomato pulp a couple of minutes before cooking. I just cut the tomato in half and grate it (remove the skin).
Rice dietary soup is ready.
