I propose to cook delicious and aromatic red cabbage borscht. I cook borscht without meat, the dish turns out to be more useful. But for those who love broths, use any kind of meat for such borscht. Vegetable set – standard, potatoes, onions, beets and carrots. Use any fresh herbs to serve.
Prepare all ingredients.
Peel the potatoes and cut into small cubes.
Put potatoes in boiling water, add a little salt and cook for 10 minutes.
Chop the red cabbage.
Place the cabbage in a saucepan and cook with the potatoes for another 5-6 minutes.
Prepare frying for now. Dice the onions, carrots and beets and grate. Place vegetables in a skillet with hot oil. Sprinkle the beets with lemon juice if desired to keep them bright.
Sauté vegetables for 2-3 minutes, then add tomato paste.
Simmer for a couple more minutes.
When the potatoes and cabbage are completely cooked, add the vegetable frying to the borscht. Stir, pepper to taste, cook the borscht for another 2-3 minutes over low heat.
At the end, add chopped parsley, let the borscht boil and you're done. Let the dish sit under the lid for 5-7 minutes.
