Below I will tell you more about how to make quinoa stuffed pumpkin. Instead of raisins, you can use dried cranberries, and replace parsley with cilantro. It is more convenient to use a pumpkin of a bottle variety. It turns out to be a very tasty and satisfying combination.
Prepare all ingredients.
Cut the pumpkin in half, remove the seeds. Bake in an oven preheated to 190 degrees for about 40 minutes.
While the pumpkin is cooking, boil the quinoa for 15-20 minutes until tender.
Peel the apple and cut into small cubes. Soak the raisins in warm water for a couple of minutes, then drain and rinse. Chop celery and herbs too.
Remove the pumpkin from the oven. Scrape off some of the pulp with a spoon, cut it into cubes.
Add the prepared filling and pumpkin pulp to the quinoa. Season with salt, pepper, season with vegetable oil and apple bite.
Fill the pumpkin halves with the minced meat and bake for another 20 minutes.
Pumpkin stuffed with quinoa is ready, bon appetit!
