The most important thing is to choose a delicious fragrant pumpkin, then a gorgeous result is simply guaranteed. We dilute the finished pumpkin with broth and cream. You can use any spices, I suggest taking dried garlic and Italian herbs. Just boil the mussels, add directly to the soup. Optionally, it can be served with crackers. Prepare all the ingredients you need.
Peel the pumpkin, rinse, dry, cut into small cubes.
Peel and rinse the onions and carrots. Cut vegetables into small pieces.
Preheat a frying pan and brush with vegetable oil, put vegetables, fry for 4-5 minutes over low heat. Then cover the pan with a lid and simmer until the pumpkin is ready – 10 minutes. Optionally, the pumpkin can be baked in the oven.
Boil mussels for 3-4 minutes and cool.
Transfer the finished vegetables to a blender bowl, add hot broth.
Grind the pumpkin until smooth, to a puree consistency.
Pour soup into a saucepan, add cream.
Add all the spices to taste, bring to a boil and turn off heat. Add mussels to a plate when serving.
