Making potato pancakes with chicken is pretty simple and you usually have all the ingredients on hand. Fillings can be very diverse: cabbage, mushrooms, minced meat, sausage, etc. You can add any favorite sauce and fresh seasonal vegetables before serving. Take note of the recipe!
Prepare all ingredients.
Choose medium-sized potatoes, 4-5 pieces are just enough for two servings.
Cut the chicken fillet into small cubes and fry in a pan with the addition of spices and salt until tender, then transfer to a plate for now.
Grate potatoes on a coarse grater and squeeze.
Transfer the potatoes to a deep bowl, add flour, egg, salt and ground pepper to taste.
Mix everything well.
Heat the oil in a skillet and spread the potato mass with a tablespoon, forming a round pancake.
Try not to make potato pancakes too thick. First, fry one side over medium heat, then gently turn over and brown the other.
Turn the pancake over again and place the fried chicken pieces on one side. Sprinkle the chicken fillet with grated cheese and chopped herbs.
Cover the filling immediately with the other side and press lightly with a spatula. Simmer in a skillet for a few minutes until the cheese melts.
