Any pork is fine for stews, but depending on the type of meat, the cooking time may increase. If you like to have more vegetables, feel free to increase their number. Don't worry about the wine, the alcohol will evaporate during cooking and leave a pleasant, light aftertaste. Besides, wine makes meat more tender and softer. But do not take wine with a strong aroma like Isabella, it can overwhelm the rest of the taste of the dish.
This stew is best served with toasted white bread, garlic and herbs.

Make cross cuts on the skin of the tomatoes. Pour boiling water over and leave for 5 minutes. Drain the hot water and pour cold water over them. Remove the tomatoes and skin. Cut half into pieces, chop the rest in mashed potatoes.
Pour vegetable oil into the pan. Cut the onion into slices, grate the carrots on a coarse grater and add to the pan.
Cut the celery stalks into slices and place in the pan with vegetables.
Fry for 10 minutes over low heat. Then place half of the vegetables in a plate and cover.
Rinse the pork, dry and cut into medium slices across the grain.

Add 100 milliliters of water, salt and simmer everything over low heat for 40 minutes, stirring.
Add chopped tomatoes, herbs, Italian herbs, stir and simmer for another 5 minutes. Add the vegetables set aside, heat still 2-3 minutes and remove from heat.
