Italian pilaf is a combination of rice and mushrooms. Use mushrooms, and you need long-grain rice. To add extra color and flavor to the pilaf, use tomato paste.
Prepare all ingredients.
Fry sliced mushrooms in vegetable oil. Season the mushrooms with salt and pepper to taste.
Pour in the washed rice, stir, fry for a couple of minutes.
Pour in warm water and add tomato paste. Season to taste.
Simmer pilaf over low heat for 35 minutes until rice is soft.
Serve pilaf to the table sprinkled with finely grated cheese. Enjoy your meal!
