It is easy to fry "Lapti" pies with potatoes at home. The dough is kneaded in kefir with soda and egg yolk. Do not add protein – the dough will be tougher. For the filling, boil the potatoes and sauté the onions, then make a soft puree.
Prepare your ingredients.
Pour baking soda into room temperature kefir.
Whisk in the chicken yolk.
Pour a couple of tablespoons of butter into the dough, shake. Add some salt.
Add the sifted flour.
Knead a soft dough, leave it under a towel for 15-20 minutes, the dough will be more elastic.
Peel the potatoes and rinse, fold into a pot, fold into a pot, cover with water. Cook for 20-25 minutes until tender, add salt to taste.
Dice the onion and fry in a skillet with vegetable oil (2 tablespoons) until lightly browned.
Add the onion and butter to the boiled hot potatoes.
Prepare mashed potatoes, mash with a crush. Season to taste.
Grease your hands with butter, divide the dough into balls.
Flatten each ball with your palm, put the potato filling in the center, about 1-1.5 tbsp. l.
Blind the pies, flatten again to make a flat cake – like "bast shoes".
Fry pies – "bast shoes" in a frying pan with vegetable oil over medium heat. Cook for 3-4 minutes on each side until golden brown.
Serve the pies right away. Enjoy your meal!
