Prepare all ingredients.
Wash the kohlrabi, peel and cut into medium slices.
Transfer the kohlrabi to a saucepan, pour in the water so that it only covers the cabbage. Add a small amount of vinegar, bring to a boil and simmer for 8-10 minutes. Cool the kohlrabi in the liquid.
Then transfer to a clean, sterilized jar.
For the marinade, boil water with salt, sugar, pepper, peeled garlic and bay leaves. Boil for 1 minute, add vinegar at the end.
Pour the hot marinade into a jar of kohlrabi. Close the lid, leave it to cool completely. Then refrigerate for 3 days.
