Do not add too many spices to the brine, they interrupt the unique mushroom aroma of honey agarics. If you don't like cloves, replace them with mustard seeds. You can add horseradish and black currant leaves to the brine.
Prepare all the necessary ingredients for making mushroom brine. The mushrooms themselves are already prepared and boiled.
Put all the spices, salt and sugar in a deep saucepan.
Pour in cold water and place over medium heat. After boiling, boil it for 10 minutes.
Pour vinegar into the brine and add the mushrooms. Simmer everything for 7 minutes with a slow simmer.
Put everything in sterilized jars and close with boiled lids. Wrap until cool. The brine should be used immediately and not stored.
