Prepare your ingredients.
Rub flour, baking powder, salt, and chilled butter into crumbs with your hands, or make it easy by putting all these ingredients in a blender bowl.
Line the bottom of the low-rimmed baking dish with baking paper so that the edges protrude (it will be easier to remove the cake later). Pour the butter and flour mixture, shape the bottom and sides of the future cake with your hands. Refrigerate while filling.
Separate the white and yolk of one egg. Add half the sugar to the protein.
Whisk the protein and sugar until firm peaks.
Add the remaining sugar, lemon zest to the mascarpone, add vanillin, beat until fluffy, add egg white, whipped with sugar.
