Description of preparation:
This side dish is ideal in that it is tasty both hot and cold, especially with meat or sour cream. The taste of porridge will improve significantly if you add a couple of pinches of dried thyme or a couple of sprigs of fresh when boiling it. Be sure to steam the peas before cooking to reduce its time.
Prepare the indicated ingredients. To cook porridge, use dried steamed peas, not fresh.
Sort the dried peas, pour into a deep container and fill with cold water. Rinse a few times. Pour in warm water and leave for 2 hours to swell.
Pour it into a pot or cauldron, ladle, pour hot water and salt. Lay out the bay leaves and place the bowl on the stove. Bring to a boil and remove the resulting foam. Cook porridge for about 30-40 minutes.
After this, drain the water and pour again about 1 cup of boiling water. Pour two pinches of soda, but no more! Reduce heat and stir porridge, as soda will form a plentiful foam. Thanks to the addition of soda, the dense peel of the beans will become softer, they will cook faster, but with continuous stirring. Cook porridge for another 10 minutes until cooked, tasting.
Serve the prepared pea porridge on the water to the hot table, putting it in plates with gravy.
