Prepare all ingredients.
Rinse and dry the zucchini, then cut the zucchini into slices.
Rinse and dry the eggplants, then also cut into cubes.
Heat vegetable oil in a frying pan, add zucchini and eggplants, fry for 5-7 minutes – until tender.
