Cooking a casserole of vegetables in the oven is very simple, even a beginner in cooking can handle it. All vegetables are alternated in layers and baked under a cheese crust. As a sauce I have sour cream, you can replace it with mayonnaise or take both in equal proportions. Use any spices to taste. I have Provencal herbs and black pepper. The casserole turns out to be juicy, aromatic and very tasty!

Grease a baking dish with oil. Place the sliced ​​eggplant in the first layer. Since my eggplant is quite large, I cut it into circles, and then each circle in half.

Cover the dish with foil and bake in the oven at 200 degrees for about 30-40 minutes. Remove the foil a few minutes before cooking and let the cheese brown.
