Orange queen of autumn: preparing dishes with pumpkin (top 6 recipes)

Baked Garlic Pumpkin

An excellent hot appetizer or side dish will be made from pumpkin baked with garlic in the oven.

Ingredients:

  • 500 g of peeled pumpkin;
  • 3-4 cloves of garlic;
  • 2 tbsp. l olive oil;
  • coarse salt;
  • black pepper to taste;
  • a pinch of dried rosemary.

Cut the pulp of pumpkin into large cubes. Place on a baking sheet covered with parchment. Add coarsely chopped garlic, salt, pepper, oil and rosemary (sage and ground chili are also suitable). By the way, garlic can be replaced with dried granulated. Shuffle. Bake for half an hour at 190 degrees.

For soup you will need:

  • 1 kg of peeled pumpkin pulp;
  • bulb;
  • 2 medium potatoes;
  • carrot;
  • 4 cloves of garlic;
  • 4 glasses of vegetable or meat broth;
  • half a glass of cream;
  • 2 broth cubes (chicken);
  • salt, pepper to taste (if necessary).

For serving – bacon fried to a crunch, greens, pumpkin seeds.

Peel and wash the vegetables. Cut the pumpkin into large cubes, chop the potatoes, carrots, onions and garlic. Put all the ingredients in a pan, except for cream. Bring to a boil and simmer until the vegetables are tender. Then remove the pan from the heat, beat with a blender and bring to a boil again, pouring cream. Salt and pepper to taste. Serve with croutons, herbs, pumpkin seeds.

Make an unusual salad with grilled pumpkin, spicy cheese and pine nuts.

Ingredients (in 2 servings):

  • a couple of handfuls of fresh spinach;
  • 200 g of peeled pumpkin;
  • 50 g of hard cheese (parmesan);
  • a couple of spoons of cedar seeds;
  • a couple of tablespoons of olive oil;
  • salt, ground black pepper to taste.

Cut the pumpkin without seeds and peel into slices. Add salt and pepper to taste, drizzle with oil and fry in a hot grill pan until soft and golden on both sides.

Cut the cheese into thin slices using a peeler.

Put spinach, fried pumpkin slices, cheese slices and nuts on a flat dish. Sprinkle with oil and serve!

Chicken Stuffed Pumpkin

For this dish you will need boiled or baked chicken, and you can take grilled chicken or smoked – the taste will be even more saturated. Cooking stuffed pumpkin with baking will take just a little more than an hour.

You will need:

  • small spaghetti pumpkin;
  • ready chicken (boiled);
  • 200 g of hard cheese;
  • 70 ml of sour cream and tomato sauce;
  • half sweet pepper;
  • blue onion or bunch of green onions;
  • salt, black pepper to taste;
  • a couple of spoons of vegetable oil.

Cut the pumpkin in half, scrape with a spoon soft fibers with seeds, inside and out, grease with vegetable oil. Bake in the oven at 200 degrees for 30-35 minutes. Then let cool slightly.

Break the boiled chicken into fibers, grate the cheese, peel and finely chop the onion, chop the pepper into a cube.

Baked Spaghetti Pumpkin

Separate the fibers from the pumpkin with a fork, being careful not to damage the peel.

Combine all cooked ingredients in a bowl (put a little grated cheese), tomato sauce, sour cream, salt, pepper and pumpkin pulp. Stuff the pumpkin with the filling. Sprinkle with grated cheese on top.

In just half an hour you can cook a wonderful harvest of pumpkin with cinnamon, cloves, cardamom. This aromatic appetizer with sourness is ideally combined with ready-made poultry and other meat. Chilli can be added to the jar if desired.

Immediately anticipate questions on the amount of vinegar. Yes, 150 ml; the marinade will turn out spicy, vinegar, not for everybody.

Ingredients (for 2 jars of 350 ml):

  • 500 g of peeled pumpkin;
  • 500 ml of water;
  • 150 ml of vinegar 6- or 9%;
  • 100 g of sugar;
  • 6 clove buds;
  • 4 boxes of cardamom;
  • cinnamon stick.

Cut the peeled pumpkin and seeds into cubes. Pumpkin can be soft or crispy. To make the pickled pumpkin soft, marinate it in water with vinegar and leave it for 2 hours-night in the refrigerator. If you like tight slices with crunch, you don’t need to pickle the pumpkin.

Transfer pumpkin with water and vinegar to the stewpan, add sugar, cloves, cardamom and cinnamon. Bring to a boil and simmer for 20-30 minutes.

Transfer boiled pumpkin into sterilized jars, pour the marinade through a sieve. For a stronger taste, add a clove bud to each jar. Roll up immediately with clean covers and turn them over to cool completely, wrapping them in a blanket.

Fragrant and juicy pumpkin and chocolate cake – the perfect dessert in the fall. To prepare it, you will need pumpkin puree, which we recommend preparing ahead of time and stored in the refrigerator.

Ingredients:

  • 150 g pumpkin puree;
  • 200 g of flour;
  • 3 eggs;
  • 200 g of sugar;
  • 1 tbsp. l zest of orange;
  • 1 tsp baking powder;
  • 50 ml of vegetable oil;
  • 2 tbsp. l cocoa powder;
  • 1 tsp ground dried ginger;
  • 1/2 tsp. cinnamon and nutmeg.

How to make pumpkin puree? Cut the washed pumpkin into slices 3 cm thick. Cut the soft part with the seeds, leave the peel. Put slices on a baking sheet covered with parchment and bake for 45 minutes in the oven at 180 degrees. Then separate the baked pulp from the peel in a blender and beat. Done! Store mashed potatoes in clean jars in the refrigerator for up to 10 days.

We will prepare the dough of two types – orange and brown.

For an orange dough, sift 100 g flour into a bowl with 1/2 teaspoon of baking powder. Beat one egg with 80 g of sugar with a mixer until light foam, pour 25 ml of vegetable oil, while continuing to work with a mixer. Introduce pumpkin puree and 100 g flour, stir well.

Now let's make the chocolate brown dough. In a bowl, sift 100 g of flour with half a teaspoon of baking powder. Add ginger, cocoa, nutmeg and cinnamon, stir. Beat with a mixer 2 eggs and 120 g of sugar until foam, gradually add 25 ml of vegetable oil. Then add flour to the liquid mass, stir.

Pour the chocolate dough into the parchment covered with parchment, orange on top. If you want, you can make a couple of stains with a spoon or a wooden stick, so that the dough mixes in some places.

Bake for 1 hour at 180 degrees. Cool, sprinkle with powdered sugar and serve. Have a nice day!
