The honey cake with soft, delicate cakes and custard will surely please your family and friends. Children can also be involved in the preparation of delicacies – they really like to tinker with the dough, roll out the cakes and grease them with custard.
Prepare the indicated ingredients.
In a deep container with a non-stick bottom: put a cauldron or saucepan with flower honey, butter, add soda and granulated sugar, salt. Place the container on the stove, including medium heat.
As soon as the mixture starts to bubble, reduce heat to minimum and cook until the caramel is honeyed. But be careful, under light foam the color of the mass itself will be much darker. Make sure that it does not burn! Turn off the heat and let it cool slightly.
Whisk two chicken eggs in a separate bowl.
Pour the egg mass into the slightly cooled caramel, otherwise the eggs may curl! Mix thoroughly and add wheat flour and baking powder.
Knead a dense honey dough and leave in the cold for 20-30 minutes, covered with cling film. Many people write that the dough must be left in a slightly liquid form for it to come through. Don't do that – then you won't be able to roll it out. Add flour and knead to a normal firm dough!
While the dough is cooling, prepare the custard. Pour granulated sugar into a cauldron or ladle with a non-stick bottom, add lemon juice – it will set off the sweetness of the cream.
Pour in milk or cream with a fat content of no higher than 30% and add the chicken yolk. Whisk the mixture thoroughly.
Pour flour into cold milk and whisk again. Add flour only to cold liquid, otherwise you will form lumps.
Place the container on the stove with medium heat. Brew the cream until thick for about 10-12 minutes, stirring constantly so that no lumps form in it. Then turn off the heating and mix the butter into the cream. Cover the dessert with cling film joint to joint and place in the cold for about 1 hour.
During this time, the dough will cool. Divide it into pieces. Roll out each piece on parchment paper without smearing it with anything. It is convenient for me to bake cakes on A4 sheets, immediately cutting out circles from the dough using a plate.
Preheat the oven to 200 degrees and bake one or two cakes in it for about 5-10 minutes, being careful not to burn. The diameter of the cakes in the photo is 18 cm.
This way, bake all the cakes. I do not bake the scraps from the cakes separately, but roll them into a full-fledged cake. Set aside two of the ugliest cakes on the cake powder – they will still crumble into crumbs.
Assemble the cake by spreading a portion of the custard over each crust and spreading it over. It is advisable to spread a lot of cream to make the cake juicy. If desired, you can first moisten the cakes with sweet syrup or water and honey, and then spread the cream. Cover the top and sides of the dessert with cream.
Break the two set back cakes into pieces and pour them into the chopper bowl. Grind into crumbs for about 3-5 minutes.
Gently sprinkle crumbs on top and sides of the cake. Place it in the refrigerator overnight to soak.
Garnish the honey cake with physalis berries, pomegranate, tangerines, etc.
Cut it into portions and don't forget about tea or coffee.
