Prepare all the ingredients.
Cut potatoes and carrots into neat slices. Divide cauliflower into inflorescences. Bake in the oven until almost done.
Heat oil in a pan, add cumin seeds. Fry until the zira begins to hiss. Add chopped onions in half rings and nuts. Fry for about 3 minutes.
Add grated ginger, chili pepper and garlic. Pour turmeric and mix. Fry for another 2 minutes.
Add the baked vegetables. Pour in coconut milk, cook for 5 minutes. Add ground coriander, cover and cook for another 5 minutes.
