For baking, it is advisable to choose muesli without preliminary heat treatment, not sweet. Coconut oil works well for muffins, but you can use butter or refined sunflower oil. Adjust the baking time. If you are cooking in a metal pan, grease the pan with oil first and then place the dough in it.
Let's prepare the ingredients.
Put the egg, sugar and coconut oil in a bowl.
Add natural yogurt and mix everything with a blender.
Pour in the muesli and stir.
Add some whole wheat flour and slaked soda. We knead the dough.
A mixture of nuts, raisins and lemon zest is used as fillers.
Transfer the mass to a silicone muffin mold. We bake in the oven at 180-190 degrees for about 25 minutes.
