It will take you no more than 15 minutes to prepare a fragrant mayonnaise, but the main thing is to pour in a little oil! It is very important to choose quality chicken eggs, as the sauce is made with fresh yolks. If you like thinner sauces, beat 1 chicken protein separately and add it to the prepared mayonnaise, stirring with a whisk for 1 minute.
Prepare the indicated ingredients. Eggs are best used from farm birds, they are brighter in yolks.
Place the chicken yolks in a clean, dry food processor container or deep dish, separating the eggs and placing the egg whites in another container. Add salt. If desired, you can add a pinch of granulated sugar and ground garlic.
Whisk the egg yolks and salt at full speed with a food processor or mixer until white, about 5 minutes.
Then start pouring in the vegetable oil drop by drop, but do not add all at once. The technique must carefully mix the oil into the pounded yolk mass, otherwise the whole mass will simply stratify. Take your time – this is the most important step in making mayonnaise. You can pour in all the oil in about 5-8 minutes, acting gradually.
Only after you have prepared a thick mayonnaise can you add apple cider vinegar to it, not earlier, otherwise the mass will exfoliate! Stir in at low speed for about 1 minute.
Place the mayonnaise in a gravy boat or bowl and serve.
