Such mackerel only looks like smoked, but in fact it is mackerel salted in a spicy marinade. Choose fresh, oily fish, without technical damage to the skin. Due to tea and onion skins, such a beautiful, smoked color is obtained. But due to them, the structure of the meat is also denser, and the fish becomes dense.
Prepare all the necessary ingredients for making a bottle of mackerel like a smoked one. We need a clean plastic bottle with a volume of 1.5-2 liters.
Pour water into a saucepan, add salt, sugar and black tea.
Rinse the onion skins and place in a saucepan with tea. Place over medium heat and bring to a boil.
Simmer over medium heat for 5 minutes.
Remove from heat, add bay leaves, peppers, stir. Cover and leave to cool completely.
For mackerel, remove the head, entrails and black film on the inside of the ribs. Rinse and pat dry with a towel.
Cut off the top of the plastic bottle and lower the mackerel inside.
Strain the cooled marinade and pour over the mackerel so that it is completely covered with it. Cover the top with plastic wrap and secure with an elastic band or twine. Refrigerate for 2-3 days, depending on the desired salting.
Remove the mackerel from the brine, wipe it off with a paper towel and brush with oil for gloss. Then cut into pieces and serve.
