Matsoni is a traditional drink of Armenian and Georgian cuisine. Matsoni pancakes will be lush, tender and of course very tasty. The dish is simple, but you need to know a few nuances. There should be enough flour in the dough to make it thick. Don't put in a lot of baking soda. Often, recipes are published on the Internet where 0.5-1 teaspoon of soda is added to the amount of ingredients I indicated. In no case should this be done – the pancakes will be thick and fluffy, but with a bright taste and smell of soda, for me it is not very tasty. 1/3 teaspoon is enough. Let them not be like crumpets, but you will eat them with pleasure.
Prepare the ingredients for making the pancakes.
Place the matsoni in a bowl.
Add baking soda.
Add salt and sugar.
Add all the flour gradually.
Knead a sufficiently thick dough.
Spoon the dough into a hot skillet with refined sunflower oil.
Fry the pancakes on both sides until golden brown.
Lush pancakes on yogurt are ready. Serve with sour cream, honey, jam.
