Prepare all the ingredients.
To start, mix water and solution salt. Cool the solution so that it becomes very cold. You can add ice to a bowl before use.
Melt coconut oil until liquid.
Beat soy milk with starch and carrageenan. Then add salt, nutritional yeast and lactic acid, mix again.
Pour in the melted coconut oil, whisk again until smooth. Pour the mixture into the pan. Start heating over medium heat until thick, stirring constantly. It will take about 5-6 minutes. It should easily move away from the sides of the pan.
Form balls from the mass with an ice cream spoon, and use a regular spoon to scrape them into ice-cold saline. Put the mozzarella balls in the solution for a couple of hours in the refrigerator to form better.
