Prepare the ingredients.
Cut the lemon into small pieces, remove the seeds, put in a blender bowl.
Grind the lemon as small as possible.
Transfer the chopped lemon into a bowl to knead the dough, add sugar and vegetable oil.
Mix flour with baking powder for dough.
Add flour to the lemon mass, knead the dough.
Roll the dough into a layer with a thickness of about 0.7-0.8 cm. Cut out cookies of any shape.
Put cookies on a baking sheet.
Bake cookies in the oven for about 20 minutes at a temperature of 180-200 degrees.
After the cookies have cooled to room temperature, it can be sprinkled with powdered sugar and served with tea or coffee. The cookies turned out with a pleasant refreshing acidity, tasty, moderately friable, not very sweet. I recommend to cook!
